How about pancakes?

Always just porridge is too boring for you? How about ayurvedic pancakes?

According to Ayurveda, breakfast is an important meal that can boost or slow down your metabolism and contribute to your overall well-being. Maybe you've eaten a warm and light breakfast, like porridge, for a long period of time and then noticed what cold foods, other foods, and even food combinations do to your metabolism and energy in the morning. So how about Ayurvedic pancakes as an alternative to your current breakfast or porridge?

Without flour and sugar, but with lots of fiber and healthy fats & nutrients, they can give you that valuable energy boost in the morning without you falling into an energy slump shortly after. Give them a try!



Banana Coconut Pancakes


For 2 servings

Preparation time: approx. 15 min


  • approx. 150 ml coconut milk (oat, rice, soy, etc.)

  • 6 heaped tbsp. rolled oats (approx. 80 g)

  • 2 tablespoons grated almonds

  • 1 ripe banana

  • 1 tbsp. chia seeds

  • 1 tsp. cinnamon

  • some agave syrup, date syrup or honey to taste

  • some coconut oil or ghee for frying

  • Optional:

  • you can vary here arbitrarily with the different kinds of milk

  • possible variations in the spices can be cardamom, turmeric and vanilla

Topping:

Homemade fruit compote, banana, cacao nibs, roasted seeds and nuts, nut puree


Preparation:

  • Process oatmeal into coarse flour in a blender

  • mash the banana with a fork

  • put the banana and all the other ingredients in a bowl with the oatmeal and mix thoroughly

  • let the dough soak for about 10 min

  • fry pancakes of about 1/2 cm thickness on medium temperature with coconut oil or ghee

  • fry in a pan
